Apple Pie

The Apple Pie is a locally inspired Christmas cocktail with ingredients (Apples, Grain) sourced near Hamburg City. It comes with Lemon, Cinnamon flavor and brights up the festive season.

  • 70ml Aere Bratapfel Likör (apple liqueur)
  • 10ml Santiago De Cuba Anejo Superior 11 Years (rum)
  • 20ml Lemon Juice Fresh (citrus juice)
  • 50ml Apple Juice Unfiltered (fruit juice)
  • 20ml Egg White Pasteurized (egg white)
blend / wet-shake / strain

3x apple slice
1x grated cinnamon

Mixing Instructions

  1. Combine all ingredients in the shaker tin or spindle mixer tin.
  2. Dry blend the ingredients in the blender for about 10 seconds.
  3. If you used the spindle mixer tin, pour the liquid into a shaker.
  4. Add ice cubes.
  5. Dry shake for about 15 seconds.
  6. Strain the mixed liquid into the prepared guest glass filled with ice cubes.
  7. Add your garnish.

Detailed Recipe Instructions

  1. Prepare your Mise en Place.
  2. Prepare your bottle setup.
  3. Chill the serving glass with either crushed ice or ice cubes. Or place it in a fridge or freezer.
  4. Add all the ingredients (except the egg white !) into the spindle mixer tin. Or, if you have, add the ingredients to the taller part of the Tin-in-Tin shaker.
  5. Add the egg white into the mixer tin.
  6. Set the speed of the spindle mixer to the lowest setting. Othwerwise it might spill over very quick!
  7. Dry blend the ingredients in the blender for about 10 seconds. If you want to dry shake instead, do it for roughly 20 seconds.
  8. Take the chilled glass out of the fridge/freezer. If you used ice to chill the serving glass, remove everything from the glass.
  9. If you used the spindle mixer tin, pour the liquid into a shaker.
  10. Add ice cubes into the shaker
  11. Shake for about 10 seconds.
  12. Shake until chilled and fine-strain into a serving glass filled with ice.
  13. Add your garnish.

how to garnish

  • 3x apple slice, Cut the apple into thin slices and use 3-4 pieces to create a fan shape. Use a cocktail stick or wooden stirrer to fix the garnish onto the glass.
  • 1x grated cinnamon, Sprinkle some grated cinnamon over the garnish.

Mixing Tips


  • Add the egg white always, at least, into your shaker. Otherwise, it might curdle too quickly and will not give the frothy foam by the end.

Mise En Place

  • Keep all equipment and ingredients within range. It will be easier and faster to mix the drink.


  • A chilled glass keeps your drink longer and more enjoyable. Your used ice will melt slower, and the taste will stay longer.

So AERE approached us with some of their flavourful Liqueurs. Those are all made with the Base of a Korn (a type of grain liquor).

The Christmas season is coming, and my colleague Celine Wohltmann created this fabulous cocktail that pleased everyone after dinner.
It is rich in flavor and not too strong. It’s a really balanced and not-too-sweet Christmas cocktail.
