About the producer

Their story

A whisky distillery on the Swabian Alb, founded by the farmer Hans-Gerhard Fink, who grows the grain for it on 400 hectares of his own land. In Heroldstatt it makes the finch Schwäbischer Hochland Whisky — single malts and whiskies from wheat, spelt, the ancient grain emmer, corn and rye, with cask finishes — and, under its sister brand Albfink, gins, vodka, fruit brandies and liqueurs.

Grain from the distillery's own 400 hectares on the high plateau of the Swabian Alb — winter and summer wheat, barley malted on finch's own malting floor at a maltings, spelt, and black emmer, an ancient wheat Hans-Gerhard Fink has brought back into cultivation — and the clear water of the Alb.
Everything runs from field to glass in one hand: the grain is grown on the distillery's own land and distilled on what the distillery calls the largest pot still in Germany, built in 2012 with a 3,000-litre mash pot and a nine-plate column. The heads are cut off and discarded rather than returned to the next run, the new make leaves the still at about 91 % vol, and it matures only in used casks from European wine estates and the USA, at most in their third fill, so that the youngest finch whiskies are five years old.

FAQ

Questions

Frequently Asked Questions

What is the history and founding story?

Hans-Gerhard Fink is a farmer with a 400-hectare farm on the Swabian Alb. In the 1990s he married into a small fruit distillery, began distilling fruit himself, and in 1999 made his first new make from his own wheat and barley malt; the first bottles of Swabian whisky from the Gutsbrennerei Aglishardt were sold in 2002. The finch brand was registered in 2010, the new pot still went into operation in 2012, the sister brand Albfink followed in 2014, and the new distillery in Heroldstatt opened on 3 October 2024.

How are raw materials sourced?

The grain grows on the distillery's own 400 hectares on the high plateau of the Swabian Alb: summer and winter wheat, barley that is malted on finch's own malting floor at a maltings, spelt, and black emmer, one of the oldest cultivated grains, which Hans-Gerhard Fink has brought back into cultivation.

What unique production methods are used?

finch distils in batches on a pot still holding 3,000 litres of mash, heated through a steam jacket, with a nine-plate column. The heads are cut off and discarded rather than returned to the next run, the best part of the tails is distilled again, and the new make leaves the still at about 91 % vol.

What is the barrel or cooperage program?

No new casks are used: every cask has held red wine, white wine, sherry, port or bourbon, comes from leading European wine estates or the USA, and is chosen by Hans-Gerhard Fink himself. A cask is filled at most three times and toasted before each refill.

What are the aging and warehousing facilities?

Several thousand casks in different stages of maturity lie in the distillery's warehouses among the fields. The youngest finch whiskies are five years old, about 4 % a year evaporates as the angels' share, and no cask leaves the warehouse for bottling without Hans-Gerhard Fink's tasting and release.

What visitor experiences or tours are available?

The distillery shop at the Heroldstatt site sells the whole finch and Albfink range for tasting and at outlet prices, a vending machine at the new site sells regional products around the clock, and distillery tours and tastings run on set dates, with individual dates for groups of 20 or more on request. The current hours and dates are on the producer's own website.

Who is the master distiller/winemaker?

Hans-Gerhard Fink, a farmer by training, is managing director and master distiller; he grows the grain, chose the still, picks the casks and tastes every cask before it is bottled.
